
I am a big fan of salads, specially during summer time. Fortunately fruits and vegetables are extremely tasty in Italy and I wait all year for my favourite summer fruits so I can add them in my salads. Every summer I search for new delicious salad recipes and today I am sharing my ultimate favourite Caprese Salad and two other fantastic recipes:

Caprese Salad is a simple salad from Capri with only two main ingredients: tomatoes and fresh Mozzarella. Don’t be fooled as if you ever get the chance to try a real Caprese in Capri you’ll see why this modest salad became so popular. Since there are only two ingredients you’ll have to buy the best Italian tomato and the top Mozzarella cheese you can find. You only need to slice them and add Italian extra olive oil, salt, pepper and Basil. It is made to resemble the colours of Italian Flag.
Melon and Zucchini Carpaccio
I came across this salad few weeks ago and have been really enjoying this ever since. It’s very simple to make, as you only need to peel the zucchini and the melon into very thin slices and finally add some fresh Feta cheese and olive oil.

Burrata, Fig & Arugula Salad
Burrata is a fresh Italian cheese made from Mozzarella and cream. This is an extremely simple salad recipe, just make sure you find a fine Italian Burrata cheese and fresh rip figs. Mix them with Arugula or even baby spinach and add some caramelized walnuts or pecans. As for the dressing: add 1 tablespoon honey, 1 tablespoon balsamic vinegar and 2 tablespoon of extra olive oil and pinch of salt.
