Amalfi Coast is one of my favourite coasts in the Mediterranean and it’s not just because of it’s breath taking views, charming colourful villages overlooking the blue sea , but also the delicious cuisine of this region. I am always excited for the dinning experience when I go back, and I have to say some of the best dishes I have ever had where from the Amalfi Coast.
I always wondered how with using only two or three main ingredients the result becomes so delicious? Well the secret lies in their fresh and tasty ingredients that they produce plus the crucial element ‘ sun’ that makes their products blissful and sweet.
Thanks to the power of internet I have found Chef Gennaro from Minori (a small town in the Amalfi Coast) who teaches his local dishes and shares all the secrets and tricks.
Today I want to share one of my favourite dishes made by Chef Gennaro on the hills of his hometown Minori.
Dish of the day: Taglierini Pasta with fresh chilli tomatoes
Ingredients: Plum tomatoes, Garlic, Chilli Peppers, Basil , Salt, Olive Oil & Taglierini Pasta
